I cannot believe it has been 3 months since I wrote a post. I have been trying to reflect on why I took such a long hiatus, and I have come to a few conclusions:
It has been a WILD three months. Three months ago, no one knew who would win the election much less be able to imagine the craziness that has happened at the Capital? Couple that with the weirdest holiday season I can remember and some personal struggles and it was just a lot to cope with.
I was more than burnt out. The older I get the more I realize that my mental health is in direct correlation to the amount of sleep I need. When I was in law school (arguably the worst season of my life) I slept 10-12 hours a night. Every night. I like to write in the mornings so if I am requiring extra sleep, writing just isn’t going to happen. Which leads me to…
I got a new job! I loved my soon-to-be-former company. So many of the people I have worked with there, especially my immediate team, are amazing. My main teammate is one of my best friends and it is going to be so hard to leave, but I had no idea how much the day to day of that job was draining me until I finally confirmed my start date for my new one. The moment that burden was lifted from my shoulders, I started sleeping 6-7 hours a night again.
Now that that is out of the way, let’s talk about holiday traditions. I know, the holidays are over and you have moved on, but I bring it up for a good reason, I swear. One of the traditions that I have half created/half-remembered from my childhood is having cinnamon rolls on a holiday morning. On Thanksgiving, I made these great sticky buns for breakfast, and they were amazing! Not too sweet and fairly easy. But for Christmas, I just wanted something easy. And blueberry-y — for some inexplicable reason. So I came up with this elevated version of pre-made cinnamon rolls (you know, the kind in a tube).
My husband’s family gets together for Christmas Eve with one side and then the other side on the day after. My husband and I like to have our own mini Christmas morning and gift exchange before we go spend the day with his family. That is a lot to take on in a few days, so I wanted that warm, gooey Christmas breakfast but without all the effort of Christmas Eve night since family is over. This recipe nails it and is so easy, you can make it on a Saturday morning with basically zero effort. I make them the night before and let them sit out overnight, but you can throw everything together right before you bake too.
I should mention, the pan is key! You need one that is appropriate for the number of rolls you are making. I like using Immaculate Baking Company’s classic cinnamon rolls (they are organic, with none of the bad stuff, so I feel better about not making them from scratch). They are 5 rolls per pack, so a round baking dish that has a little room but not much is perfect. I love this cutie little one.
Blueberry Cinnamon Rolls
Ingredients
1 tube of classic cinnamon rolls
8 oz frozen blueberries (I like TJ’s Wild Blueberries)
1/4 cup brown sugar
To Make
Preheat the oven according to the package’s instructions (if baking immediately).
Put blueberries and brown sugar into the bottom of the pan and quickly mix together so sugar is even throughout.
Put cinnamon rolls on top of the mixture (set any icing aside or in the fridge if not baking until the next morning). If baking the next day set aside until morning.
Bake according to package instructions.
Remove, let cool for a few minutes and enjoy your unbelievably simple to make delicious breakfast.
Notes:
You can double and use a larger pan. You just want to make sure the rolls get fairly close together when baking.
You can add all kinds of fun things to the mixture like lemon or orange zest, ground cloves, and nutmeg, other frozen berries, etc.
